Misspent Friday Night

I think I may have developed the wrong priorities.

Last night, I made orange marmalade…

And this morning, the sun came out to play in the glorious jars.

I am a ceramic sculptor living on the South coast near London, England.     Such a rich color! Is it a trick of the sun, or did you use blood oranges? I love marmalade and would like try your recipe. Thank you, Anna.

      Hi Lynda! The sun was in a playful mood…
      This is the recipe, I was hoping someone would ask!
      I used Seville and normal organic oranges, plus the juice from a lemon.
      To my 2 kilo fruit, I used almost 4 kilo sugar. It sounds a lot but the marmalade won’t set unless the proportions between the pectin and sugar is right. I cut up the fruit in slices and put them in a very large saucepan. I added enough water to cover by about 3 inches. Boil until the peel is soft.About 2 hrs. Remember to stir often as otherwise it may burn. Then add the sugar and boil softly for another 2 or so hrs. Stir. I use the pips because of the pectin, so I now start to fish them out as I stir. Also remove excess froth…When the mix begin to look thicker you can remove a tsp and put it on a plate to see if it has set. If not, keep cooking; it will set, I promise. Heat clean jars in oven, let the marmalade cool a bit and decant! Yum

      Had an email from an old friend from Uppsala that night; he was dining at the castle in full penguin regalia. He sent a few photos from the do; It was an University inauguration of 50 new doctorates. Big party!
      And I? What was I doing with my time? Making marmalade. Hmpf!
